Endive, Broadleaf Batavian belongs to the chicory family of leafy greens, all of which have similar bitter notes. When eaten raw, endive microgreens have a pleasant and mildly bitter taste, and make a great addition to salads, garnishes and sandwiches. Their taste becomes more mellow, with a nutty sweetness, when cooked, providing a good contrast to other strong flavors.
Endive is an extremely nutritious addition to any meal, as their leaves are rich in vitamins A, C and E, and minerals like calcium and potassium. Endive has also been touted to stimulate appetite and aid digestion, while being low in calories.
Being fairly easy to grow, the seedlings can also be grown into baby greens.
